Napoletana

Italian Pancetta and melted Mozzarella with Penne (Serves 4)

Ingredients
- 400g dried penne
- 100g cubetti pancetta (cubed Italian smoked bacon)
- 1 jar Sacla' Napoletana
- 150g Buffalo Mozzarella, drained & roughly chopped
- fresh basil leaves, to garnish
- grated Grana Padano cheese, to serve
- sea salt and freshly ground black pepper

1. Bring a large pan of water to the boil. Add the pasta and cook until al dente. Drain.
2. Meanwhile, heat a non-stick frying pan over a medium-high heat until very hot. Carefully add the cubetti pancetta and cook for 3-4 minutes until browned and crisp. Drain the pancetta on kitchen paper and carefully wipe any excess oil from the pan.
3. Return the pan to the heat and pour in the Sacla' Napoletana. Bring to a gentle simmer and add the cooked pancetta.
4. Return the drained pasta to the pan. Add the sauce along with the cubed Mozzarella. Stir well to mix (the heat of the pasta and the sauce will melt the Mozzarella) and season to taste.
5. Sprinkle with freshly grated Grana Padano cheese and garnish with fresh basil leaves. Serve immediately.
